A new artisan bakery has opened inside a small wooden shack on a Birmingham street corner with a traditional Filipino concept. Jay Matic, who owns Manila Artisan Breads, has set up his first permanent bakery at the side of Gordon Road in Harborne. The baker moved to the UK from the Philippines in 2006 and, after graduating from the National Bakery School in London, wanted to bring the taste and traditions of Filipino panaderia to Birmingham. “We want to serve the local community with freshly-baked bread that is mixed on site, baked on site and served on site just like the inner city panaderia in the Philippines,” says the founder.
As well as fresh sourdough, Manila bakes and serves Filipino breads including Pandesal, a staple roll commonly eaten for breakfast, alongside their famous pretzels and artisan donuts. The bakery emphasizes a commitment to quality: “We are into real bread. So no additives or preservatives, that's always our aim. I want to teach the new generation that there are types of bread available that are good for your gut and your health. Sourdough is the most natural type of bread that our ancestors used to have.”

Their bread tastes great and are also healthy. When I ate the bread from Lartizan for the first time, I had to ask where the bread was from because it was that good. Manila is a very cosmopolitan city and full of delightful surprises.
